Punjabi Rice

This rice is featured in the picture Faux Tofu Burger and Garbanzo Burger picture below. For added variety, you can add almost any vegetable you want to the rice, and it will still have a very good flavor. Even Cashews are good in this rice. You can half the recipe if you wish. Leaving the spices the same, will just give it a stronger flavor. If you have a cold, I recommend adding Tomatoes. Serves 6.



4 cups water
2 cups rice (May use Brown rice, and adjust the water accordingly).
Combine in a large pan, that has a cover.

Add to the large pan of rice the following spices...

1/2 tsp. Cumin
1/2 tsp.  Coriander
1/2 tsp. Basil Leaf
1/2 tsp. Cilantro Leaves
1/4 tsp. Ground Cardamom
1/4 tsp.  Rosemary
2 tsp. Ginger

Bring the water to a boil, and then simmer according to package directions. White rice simmers for 20 minutes. Brown rice varies by manufacturer.

In another pan, cook up your favorite vegetables.
I used chopped 16 oz. of Yellow Zucchini Squash (5 servings) with 2 tsp. ginger and 1 tsp. cumin sprinkled on top.

To serve, mix the vegetable with the Rice. Very good with either version of my Burgers, and would even work with the Faux Salmon.

Variations: Choose your vegetable(s)
1 lb peas
5 Cups spinach
1 lb  greenbeans
5 large Tomatoes, chopped, juice included.

Add:
2 tsp Ginger
1 tsp Cumin
1 tsp Coriander
