New Website! Under Construction!

Allergic Vegetarian

UPDATE:
Some Vegan and Vegetarian recipes are up, with who they are suitable for.
And, 33 Salad Recipes are up. Currently, all recipes are still only linked to under
the Vegan or Vegetarian heading, but that will change after I do a final check to be
sure that the 'allergy free' stats are correct. :D Making Soup recipes now, but do want to get
more Main Course recipes up. Meat, Fish, Poultry recipes won't be done until some time next year.
Sorry!

This is a brand new site that I'm working on so that you can have all the recipes you want, for what ever food sensitivity or food allergy you have, because not everyone has the same food restrictions.  The best part of this site is that it is NOT completely Vegetarian, as many meat eaters can have unusual food sensitivities too, including to the Mustard and Lily families.

Currently, I am working on recipes for Vegan, Vegetarians, and Meat eaters with allergies in the 8 most common food allergies (Dairy free, Egg free, Peanut free, Tree Nut free, Gluten free, Shellfish free, Fish free, Soy free, Kyt friendly (those who are like me - Mustard and Lily families, and more), and Onion free, Garlic Free. Seed free and Uticarian diets will be in my second stage of recipe making, hopefully beginning in February.

This site will feature recipes by group, so that you can know that you are getting only the 'gluten free' recipes, or only the 'dairy free', and so on. However,  I do intend to use Google search feature on my site so that you can find the recipe that is, for example, DF, SF, GF but contains peanuts or whatever combination you need.

I shall have recipes for the "Top 8" food allergies, as well as what I'm calling, the "Free of Top 8 + Onion, Garlic".  The URL may say '9free.html', but because Sesame seed is now considered to be the 9th most common allergy in the EU, I'll have to have a "Top 9" that in my case, will include ALL seeds, and not just a specific seed, as I refuse to just single out 1 seed, when in reality, more than just Sesame seeds are an issue. Sunflower Seed is in steep competition with Sesame Seed for the 9th spot.

Most people who can't have Onion are sensitive to it, and not allergic. This is why Onion and Garlic isn't the "9th". Speaking of seeds, watermelon seeds give me a mild upset stomach.  Many feel that I'm just toxic which is why I react to so many foods.

Have a special request?
Comment to this blog, and I will add recipes that reflect your special request ASAP.

Date I hope to have many recipes up on site? These are my initial deadlines.

UPDATE: It is looking like January 1st, is more likely to happen, and December 15th is unlikely, due to NanoWrimo, storms and colds. Its hard to think when your head is all foggy. LOL I tried though!

1) December 15th, 2010 - Some recipes up, but striving for a Dec. 20th due date for even MORE
recipes up!
2) January 1st, 2011
3) February 1st, 2011

% done?
10%

What am I working on now?
Creating the Recipes.  In Webmaster terms: I'm converting the recipes to an online format thats hopefully easy to read. I do have many recipes that I need to convert. The conversion takes time.

What did I finish?
The initial coding of the site so that it would validate properly according to modern web standards so that the majority of you should see my web page how I intended you to see it.

I'll update here, when I get it done. I intend to put some key links on the home page. One such link will be to the Gluten Free Mall. :D  I would have had that link on that page already, but I forgot to put it in.
Sorry! Yes, the link went up and then went down. Silly me forgot to update my off-line version of the page. O_o

Punjabi Rice

This rice is featured in the picture Faux Tofu Burger and Garbanzo Burger picture below. For added variety, you can add almost any vegetable you want to the rice, and it will still have a very good flavor. Even Cashews are good in this rice. You can half the recipe if you wish. Leaving the spices the same, will just give it a stronger flavor. If you have a cold, I recommend adding Tomatoes. Serves 6.

Dr. Oz's Smoothies My Way

The Original contains 1 Tomato ( I left that out) and no peaches, (I put that in.) Dr. Oz's Site He recommends it for colds. I've been making my version for colds, as well, for the same reasons. Both versions are very high in Vitamin C. NO sugar is needed! Fruit is naturally sweet. Just search his site for the original Smoothie, as links tend to change, so I only gave a direct link to his home page.

Juice from 2 Oranges
1 cup Strawberries,
1/2 Cantelope
1/2 cup Peaches
Optional: Add 1 Vitamin tablet.
(Avoid Grapes, as they make the smoothie fizzy with a Vitamin Tablet. Plus, grape juice can interfere with your meds and make them more potent then what is healthy.)

Blend in a blender, until its the right consistency.

This Version Copyright by Kytriya,  October 11, 2010,  and Not Dr. Oz's version. ;)

Faux Burger

My lastest version of Burger WORKS! And, without the soy sauce. Soy sauce I think would only add to the flavor. Adding sauteed mushrooms would only enhance its flavor. I was out.  Serves 4 - 6.

The History of the Faux Burger:
I accidentally made Beef flavored tofu, but without the allspice, and with glutenous soy sauce. I bought 4 peppercorn spice for my dad, and couldn't find the allspice free version. My salmon had a beefy flavor to it. So...I thought I'd try a Faux Beef tofu, and try to remember what I did before. Since then, I found out I had to go gluten free. Thus, we have this version without the Soy sauce.

Garbanzo Burger - Tofu Garbanzo Burger

Earlier attempts had convinced me that I could never make a good "burger",
which is a fallacy. They say if you don't at first succeed, try and try again.
Thankfully, I did and came up with these tasty treats. And, these patties work
well with almost anything you could serve. Thus, you could serve it with any
Indian or Italian dish.  I made this mild, but you can definately add more of
the spices to make it stronger. Also, adding chili powder, and cayenne pepper
would give it heat, if you prefer. If not allergic, you can give this a New
Delhi flair, by adding fresh chopped red and green chilis, and 1/2 tsp Turmeric.
I can't do this. (You'll have to chop them finely, and prepare them as you
normally would. I can't remember what this entails. Sorry! )

Update: Changing my plan to be more gluten free.

I am almost finished reverting the recipes to Gluten-Free. All I really have left is to do a QA to make sure that I didn't miss any words, and then remake the recipes again, to double check that all the ingredients are acceptable. :D
Thanks for your patience!

More Recipes coming soon...

More recipes will be forth coming as soon as I create them. I hope to create a sugar free Hoisin Sauce that is sweet, GF, Onion free, etc. I hope to play around with real fruit to accomplish this. We all need 3 servings of fruit a day anyways.

Faux Fish Sticks My Way...IS Gluten Free now!

Faux Fish Sticks My Way
GF now! N! (Leave out the Pecans and you will be fine.)

I intend to revisit this recipe and create other variations on it, to give the Fish a different flavor.

There is another version of this floating around the web, but my version is Gluten-Free and healthier! Besides, the Pecans give it a wonderful sweet nutty flavor. This recipe is easy to make. I even walk you through, a gourmet presentation, if you prefer.

Faux Salmon

About the picture: Used Gimp to add Maple leaves to the bowl. I do NOT recommend serving it with actual Maple Leaves! ;)

To get a good Faux Salmon,  Kelp powder works the best. However, what if you lack Kelp powder?
I had looked all over and really couldn't find any good faux salmon recipes of the type I was looking for. I used Nori broken into as tiny of a piece I could muster.

Spaghetti ala Vegie

This recipe is Vegan, and  is Free of Onion, Garlic, Gluten and Dairy. This is my basic Spaghetti Recipe when I want it. It has a good meaty flavor for those who think they'll miss the meat. My dad can't tell the difference.

Palaak Tortellini

This is a savory Punjabi meets Italian pasta dish with Spinach, Tofu, and Garbonzo beans. Although this dish isn't spicy hot, it can very easily be made hot by adding chilies.

This dish serves 4 - 6 people Preparation Time: 45 minutes

Allergy Alert: !D !S !G, but alternatives is provided below.

Quick substitutes: Use home-made tortellini with Vegan cheese, brown rice or favorite gluten-free, egg-free noodle instead of the tortellini I use. Cashews can substitute for Tofu. Vegan Tortellini recipe coming later. Even I can't even eat this as I originally made it. So, when I find a suitable GF Tortellini thats Onion free, I'll let you know.
